- In a large bowl, whisk together the flour, brown sugar, baking powder, pumpkin spice mix, and salt.
- In a separate bowl, whisk together the milk, pumpkin puree, eggs, vegetable oil, and vanilla until well combined.
- Pour the wet ingredients into the dry and whisk until just combined. Do not overmix — a few lumps are perfect.
- Heat a large nonstick skillet or griddle over medium heat. Ladle about 1/4 cup of batter per pancake.
- Cook until the edges set and the surface is bubbly, about 2-3 minutes. Flip and cook 1-2 minutes more, until golden brown.
- Repeat with the remaining batter, adding a little oil or butter to the skillet as needed.
- Serve warm with butter, maple syrup, whipped cream, or any toppings you like.
Notes
Rest the batter 5 minutes before cooking for extra-fluffy pancakes. No pumpkin spice on hand? Mix 1/2 tsp cinnamon, 1/4 tsp nutmeg, and a pinch each of ginger and cloves. Leftovers keep in the fridge up to 3 days or freeze up to 2 months — reheat in the toaster.
