Cousin Mike's Make-Ahead Mashed Potatoes

Ultra-creamy make-ahead mashed potatoes that stay silky and never turn gluey. Warm the dairy, do not overwork them, and fold in cream cheese and sour cream so they reheat beautifully a day or two later.

Ingredients
  

  • 3 lbs Yukon Gold potatoes peeled, cut into 2-inch chunks
  • 1 tablespoon kosher salt for the cooking water, plus more to taste
  • 6 tablespoons unsalted butter melted and warm
  • 4 oz cream cheese softened
  • 1/2 cup sour cream
  • 1/2 to 3/4 cup whole milk or heavy cream warmed
  • 1/2 teaspoon black pepper
  • 2 tablespoons chives chopped, optional

Method
 

  1. Peel and cut the potatoes into even 2-inch chunks. Put them in a large pot, cover with cold water by an inch, and add 1 tablespoon salt. Starting in cold water cooks them evenly through.
  2. Bring to a boil, then lower to a simmer and cook 15–20 minutes, until a knife slides in with zero resistance. Drain very well, then return the potatoes to the hot empty pot for a minute to steam off extra moisture — drier potatoes make fluffier, less watery mash.
  3. Rice the potatoes or mash them by hand while hot. Do not use a food processor or beat them hard with a mixer — overworking releases starch and turns them gluey.
  4. Fold in the warm melted butter first, then the cream cheese and sour cream. Add the warm milk or cream a splash at a time until the texture is just right. Season with salt and pepper.
  5. To make ahead: spread into a buttered baking dish, cool, cover, and refrigerate up to 2 days. To serve, dot with a little butter, add a splash of warm cream, cover, and reheat at 350°F for about 30 minutes, stirring once, until hot throughout. Or hold them warm in a slow cooker on low.

Notes

Warm dairy is key — cold butter and milk seize the starch and make the potatoes gummy. The cream cheese and sour cream are what keep them silky through a day in the fridge and a gentle reheat. Serve with turkey, gravy, and Cousin Mike's Southern Cornbread Dressing.
