Classic homemade pumpkin pie with a crimped golden crust and one slice topped with whipped cream

Classic Pumpkin Pie

A classic pumpkin pie with a silky, crack-free custard and a crisp, flaky bottom crust. The one trick: cook the pumpkin and spices down on the stove first to drive off water and deepen the flavor.

Ingredients

For the crust
  • 1 9-inch pie crust homemade or store-bought, chilled
For the filling
  • 15 oz pure pumpkin puree (1 can) NOT pumpkin pie filling
  • 3/4 cup packed dark brown sugar
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground nutmeg freshly grated if you have it
  • 1/4 tsp ground cloves
  • 1/2 tsp fine salt
  • 1 Tbsp vanilla extract
  • 3 large eggs room temperature
  • 12 oz evaporated milk (1 can)
  • 1/4 cup heavy cream

Method

Prep and blind-bake the crust
  1. Set an oven rack in the lower third and preheat to 425F. Roll your crust into a 9-inch pie plate, trim and crimp the edges, then chill it in the freezer for 20 minutes so it holds its shape.
  2. Line the chilled crust with parchment and fill with pie weights or dried beans. Blind-bake 15 minutes, then remove the parchment and weights and bake 5 minutes more, until the bottom looks dry and pale gold. This is what keeps the bottom from going soggy under the wet custard.
Cook the puree (the one trick)
  1. While the crust chills, scrape the pumpkin into a saucepan with the brown sugar, cinnamon, ginger, nutmeg, cloves, and salt. Cook over medium heat, stirring constantly, for 5 to 7 minutes.
  2. You want it to thicken, darken a shade, and start to sputter and smell toasty. That is you cooking off the raw water and waking up the spices. Pull it off the heat, stir in the vanilla, and let it cool for about 5 minutes.
Make the custard and bake
  1. Whisk the eggs in a large bowl. Whisk in the warm pumpkin mixture, then the evaporated milk and heavy cream, until everything is smooth and pourable.
  2. Pour the filling into the par-baked crust. Reduce the oven to 350F and bake 45 to 55 minutes. Pull it when the edges are set but the center 2 to 3 inches still jiggle like Jell-O (about 175F in the middle). Tent the crust edge with foil if it is browning too fast.
  3. Cool the pie completely on a rack, at least 3 hours, then chill before slicing. The custard finishes setting as it cools. Serve with a big spoon of whipped cream.

Notes

Make-ahead: bake up to 2 days in advance, cool, cover, and keep in the fridge. No dark brown sugar? Use light brown, or swap the individual spices for 1 tablespoon pumpkin pie spice plus the salt. Fresh pumpkin works too (roast a sugar pie pumpkin and drain the puree well), but canned pure pumpkin is the most reliable. The pie keeps 3 to 4 days covered in the fridge.
