My favorite Fluffy Pancake Recipe with Pumpkin Spice to add a touch of grandmas kitchen

Ingredients:
- 1 1/2 cups all-purpose flour
- 2 tablespoons brown sugar
- 2 teaspoons baking powder
- 1 teaspoon pumpkin spice mix
- 1/4 teaspoon salt
- 1 cup milk
- 1/2 cup pumpkin puree
- 2 large eggs
- 2 tablespoons vegetable oil
- 1 teaspoon vanilla extract
Instructions:
- In a large bowl, whisk together the flour, brown sugar, baking powder, pumpkin spice mix, and salt.
- In a separate bowl, whisk together the milk, pumpkin puree, eggs, vegetable oil, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix.
- Heat a large nonstick skillet or griddle over medium heat. Once hot, ladle about 1/4 cup of the batter onto the skillet for each pancake.
- Cook until the edges begin to set and the surface is bubbly, about 2-3 minutes. Flip the pancake and cook for an additional 1-2 minutes or until golden brown on both sides.
- Repeat with the remaining batter, adding more oil or butter to the skillet as needed.
- Serve the pancakes warm with butter, maple syrup, whipped cream, or any other toppings of your choice.
